Chicken Salsa Fiesta!

Ok.  I am dead serious.  This is absolutely one of my favorite things ever.  EVER.  It is too good.  And what's even better... we found it on the side of a Bisquik box.  Hallelujah.  We thought we'd try it, and it turned out to be AMAZING.  So, you should definitely make this. 

Ingredients...
2/3 cup Original Bisquik mix
2 tablespoons of water
1 egg
1 1/2 cups shredded cheese (won't use all at once)
3 boneless chicken breast halves, cut into 1/2-inch pieces
2 tablespoons of vegetable oil (or you can use butter or olive oil... it's just to cook the chicken in.  Yeah.)
1 1/4 cups Old El Paso Thick 'n Chucky Salsa (or whatever salsa you want to use... but something like that.)

Directions...
Preheat your oven to 400° F.  Stir together the Bisquik, water, and egg.  Spread this mixture in a sprayed 8 or 9-inch squared pan.  To me, this is the hard part.  It takes me forever to do it right.  Ha.  Then, sprinkle with 1 1/4 cups of the cheese.  Set aside.

Cook and stir chicken over medium heat until the outsides turn white; drain... but you don't have to drain.  We don't always... we like it good and greasy.  Stir in the salsa; heat until it's real hot.  Spoon over the batter in pan to within 1/2-inch from the edges.  Bake 22-25 minutes or until edges are dark golden brown.  Sprinkle with remaining cheese.  Bake 1-3 minutes or until cheese melts; loosen from sides of the pan.
