That's the only way to describe Grandmother's
Chicken and Dumplings. They are way too good for you not to try...
so, why don't you go make some. You haven't lived if you haven't
tried them like this. Seriously.

GRANDMOTHER'S CHICKEN AND DUMPLINGS
INGREDIENTS
- 1 Whole chicken
- 4 Tbsp butter or margarine
- 1 med. diced onion
- 2-3 stalks celery diced
- black pepper
- salt
DUMPLINGS
- 2 cups self-rising flour (Old
school would be 2 c. plain flour, 1 Tbsp. baking
powder, 1/2 tsp salt)
- 2 heaping Tbsp. lard (Use butter or even
crisco as a substitute if you don't have lard.)
- dash of salt
- water
We don't cut our dumplings
- Grandmother pinched off the dumplings in small balls and
since we are "Quick" - we do this rather than rolling them
out and cutting them into strips. If you prefer flat
dumplings, go right ahead!) I always put 1 1/2 cups
flour in bowl, cut in lard, then stir in water until like a
very thick batter. Then I stir in the other half cup
of flour until dough is stiff.
DIRECTIONS
- Place washed whole chicken in 5 quart
Dutch oven and cover with water.
- Add butter, onion, celery, and
pepper.
- Bring to a boil, then reduce to
medium heat for about 1 hour. (Internal temp
of 180°)
- Take chicken out of pot, pull meat
off bones and put back into pot. (You may need to
add another cup or cup and a half of water. If so,
add more black pepper.)
- Add salt to taste.
- Pinch off small bit of dough and drop
in one at a time.
- Bring the broth to a boil, then
reduce to medium heat for about 10 minutes. (Now
don't cook 'em too long - those dumplings will
disappear!)
Grandmother said pepper and onion, pepper and onion,
