FRIED CABBAGE AND CORNBREAD

Ingredients: Cabbage... yeah.

Directions:  Cut up cabbage… like, in little strips. Kind of like cole slaw, and wash it in a strainer. Make sure it dries pretty good, too. You know what happens when water goes in hot grease. Now, I use a big ole’ iron skillet. Cabbage is huge when it’s raw, so you’ll need a 5 quart. Put your stove at a medium setting… put some vegetable OR olive oil (whichever you prefer) in the pan – about the size of a small pancake. Throw that cabbage in there and stir it around – it’ll look all greasy. Sprinkle a layer of salt and pepper over it – I like it hot… I use more pepper. Cook it until it’s all floppy, but don’t let it turn brown… unless you want it burnt. Then… eat it.

A good meal to eat with fried cabbage…
Fish/Seafood… I think it’s a great substitute for cole slaw. Well, I think it’s a great substitute for breakfast, so don’t take my word for it. Also, with a seafood meal, make your cornbread a little thicker than usual, add some diced onion and celery, and fry/bake/deep fry it. If you deep fry it, drop little spoons of the batter in the deep fryer and stir them around real good, and you’ve got homemade hushpuppies!
